Arugula, also aptly known as Rocket, packs a punch with both flavor and goodness. High in antioxidants, anti-carcinogenic phytochemicals, vitamins A, C, E, K and minerals (particularly copper & iron), arugula is a YES in our kitchen, benefiting bones, brain, digestion, immunity & vision.

Detoxification: 

Higher levels of antioxidants, help us age more gracefully, can help reduce free-radicals that can cause complex illnesses, and work to maintain a healthy balance of all the enzyme reactions within your cells.

Improved Mineral Absorption:

Arugula is lower in oxalates than other leafy greens, and it is also a great source of minerals, iron and copper in particular. This means that your body is better able to absorb and benefit from all the awesome nutrition. Pair with vitamin C to add iron absorbability.

These mighty nutrients work together to support vision, bone health, immunity, heart health, energy and mood. Add some healthy, whole food fat like walnuts or avocado to encourage Vitamin A absorption.

A word on your kidneys:

** Arugula is relatively high in oxalic acid (though it’s lower that many other dark leafy greens) … Although food containing oxalates are healthy, if you have Kidney issues or a history of kidney stones, it is possible that oxalic acid may be best consumed sparingly. Because oxalic acid is formed in an individual’s body, not everyone need be on an oxalate reduced diet. Testing by a urologist would be beneficial to determine what is best for you.
